Fresh blueberries make this quick bread incredibly moist and full of flavor. It's one of our favorite ways to use the berry harvest each summer.

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 1/2 cups fresh blueberries

Directions

  1. Preheat the oven to 350°F and grease a 9x5-inch loaf pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk the egg, milk, oil, and vanilla until combined, then stir into the dry ingredients just until no streaks of flour remain.
  4. Gently fold in the blueberries.
  5. Pour the batter into the prepared pan and bake for 55-65 minutes, until a toothpick inserted in the center comes out clean.

Allow the loaf to cool before slicing. It's excellent served warm with butter.
