Fresh blueberries make this quick bread incredibly moist and full of flavor. It's one of our favorite ways to use the berry harvest each summer.
Ingredients
- 2 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla
- 1 1/2 cups fresh blueberries
Directions
- Preheat the oven to 350°F and grease a 9x5-inch loaf pan.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk the egg, milk, oil, and vanilla until combined, then stir into the dry ingredients just until no streaks of flour remain.
- Gently fold in the blueberries.
- Pour the batter into the prepared pan and bake for 55-65 minutes, until a toothpick inserted in the center comes out clean.
Allow the loaf to cool before slicing. It's excellent served warm with butter.
