When blueberry season arrives, there's no better way to start the morning than with homemade blueberry pancakes.

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 egg
  • 1 1/2 cups milk
  • 2 tablespoons melted butter
  • 1 cup fresh blueberries

Directions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk the egg, milk, and melted butter, then pour into the dry ingredients and stir just until combined — a few lumps are fine, don't overmix.
  3. Gently fold in the blueberries, taking care not to crush them.
  4. Heat a griddle or nonstick pan over medium heat. Pour 1/4 cup batter per pancake and cook 2-3 minutes, until bubbles form on top and the edges look set.
  5. Flip and cook 1-2 more minutes, until golden brown on both sides.

Serve warm with butter and real maple syrup.
