When blueberry season arrives, there's no better way to start the morning than with homemade blueberry pancakes.
Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 1 egg
- 1 1/2 cups milk
- 2 tablespoons melted butter
- 1 cup fresh blueberries
Directions
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk the egg, milk, and melted butter, then pour into the dry ingredients and stir just until combined â a few lumps are fine, don't overmix.
- Gently fold in the blueberries, taking care not to crush them.
- Heat a griddle or nonstick pan over medium heat. Pour 1/4 cup batter per pancake and cook 2-3 minutes, until bubbles form on top and the edges look set.
- Flip and cook 1-2 more minutes, until golden brown on both sides.
Serve warm with butter and real maple syrup.
