Fresh corn cut directly from the cob gives these fritters incredible sweetness and texture.
Ingredients
- 2 cups fresh corn kernels
- 1 cup flour
- 1 egg
- 1/2 cup milk
- 1 teaspoon baking powder
- Salt and pepper, to taste
- Oil, for frying
Directions
- In a bowl, whisk together the flour, baking powder, salt, and pepper, then stir in the egg and milk until just combined.
- Fold in the corn kernels.
- Heat about 1/2 inch of oil in a skillet over medium heat. Drop spoonfuls of batter into the hot oil, flattening slightly.
- Cook for 2-3 minutes per side, until golden brown.
- Drain on paper towels.
Serve with maple syrup or sour cream.
