Fresh corn cut directly from the cob gives these fritters incredible sweetness and texture.

Ingredients

  • 2 cups fresh corn kernels
  • 1 cup flour
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • Salt and pepper, to taste
  • Oil, for frying

Directions

  1. In a bowl, whisk together the flour, baking powder, salt, and pepper, then stir in the egg and milk until just combined.
  2. Fold in the corn kernels.
  3. Heat about 1/2 inch of oil in a skillet over medium heat. Drop spoonfuls of batter into the hot oil, flattening slightly.
  4. Cook for 2-3 minutes per side, until golden brown.
  5. Drain on paper towels.

Serve with maple syrup or sour cream.
