Bell peppers are one of the garden's most versatile vegetables, and stuffed peppers are always a crowd favorite.
Ingredients
- 4 bell peppers, tops cut off and seeded
- 1 pound ground beef
- 1 cup cooked rice
- 1 can (14.5 oz) diced tomatoes
- 1 cup shredded mozzarella
- Salt and pepper, to taste
Directions
- Preheat the oven to 375°F. Brown the ground beef in a skillet over medium heat, breaking it up as it cooks, until no pink remains.
- Stir in the rice, diced tomatoes, salt, and pepper, and simmer for a few minutes until well combined.
- Stuff the peppers with the beef mixture and stand them upright in a baking dish.
- Cover with foil and bake for 35 minutes, until the peppers are tender.
- Uncover, top with mozzarella, and bake for 10 more minutes, until the cheese is melted and bubbly.
Serve with fresh garden salad and crusty bread.
