Bell peppers are one of the garden's most versatile vegetables, and stuffed peppers are always a crowd favorite.

Ingredients

  • 4 bell peppers, tops cut off and seeded
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded mozzarella
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 375°F. Brown the ground beef in a skillet over medium heat, breaking it up as it cooks, until no pink remains.
  2. Stir in the rice, diced tomatoes, salt, and pepper, and simmer for a few minutes until well combined.
  3. Stuff the peppers with the beef mixture and stand them upright in a baking dish.
  4. Cover with foil and bake for 35 minutes, until the peppers are tender.
  5. Uncover, top with mozzarella, and bake for 10 more minutes, until the cheese is melted and bubbly.

Serve with fresh garden salad and crusty bread.
