If you've never roasted beets before, you're in for a treat. The roasting process concentrates their sweetness and creates a rich, earthy flavor.

Ingredients

  • 6 fresh beets
  • Olive oil, for drizzling
  • Salt, to taste
  • Pepper, to taste

Directions

  1. Preheat the oven to 400°F. Trim the beet greens (leaving an inch of stem so they don't bleed too much) and wash the beets well.
  2. Drizzle each beet lightly with olive oil, season with salt and pepper, and wrap individually in foil.
  3. Roast for 50-60 minutes, until a knife slides easily into the center.
  4. Let cool slightly, then slip the skins off using your hands or a paper towel — they should rub away easily.

Finish with butter or balsamic glaze.
